Ingredients
1.5 lbsGround Beef (or meat of choice)
1/2cupOnion, chopped
1cupMilk
8oz (1 block)Cream cheese
15oz canPumpkin Puree
1cupWhite cheddar cheese, freshly shredded
1/2cupParmesan cheese, shredded or gratedFreshly shredded from the block will yield the best results
1.5tbspGarlic, minced
1.5tbspItalian seasoning
2tspOregano
1/8tspGround nutmeg
1/4tspGround coriander
1/4tspCrushed red pepperfor a more spicy dish, use 1/2 tsp
2tspSalt
1/2tspPepper
Instructions
In a small pan, cook the onions on low/ medium heat until soft and transparent, about 5-10 minutes.
In a large pan, cook ground beef until just browned. Add the spices and the garlic. Cook the spices in the meat for 2 minutes. Then add the onion. Let cook until the meat gets dark and crispy. If you prefer to drain the fat, drain it after the meat is just browned and move forward.
Add The milk, cream cheese (I cut them in chunks to make melting faster), and pumpkin.
Once melted and mixed, remove from the heat and add the cheese. Stir well.
Serve with Pasta, over mashed potatoes, or just enjoy on it's own!
