Maple Vanilla Pancakes

Ingredients
- 2 cups All-purpose flour
- 4 tsp Baking powder
- 1 tsp Salt
- 1 tsp Vanilla
- 1/4 cup Maple syrup* If you prefer a sweeter pancake, go up to 1/2 cup
- 2 Eggs
- 1 1/2 cups Milk
Instructions
- Pre heat a skillet or flat griddle to low/medium heat.
- In a mixing bowl mix flour, baking powder, and salt.
- Make a hole on the middle and add the remaining wet ingredients and mix well.
- Pour into a measuring cup with a pour spout.
- Add a thin layer of butter, oil, or bacon grease to your pan. This creates a non-stick surface and adds flavor and a crispy texture to the outside of your pancakes.
- Pour your desired size on the skillet and cook until you see bubbles that pop and do not fill in. That means it's time to flip.
- Let cook for 1-2 minutes on the flip side. You will know it's ready when you gently press the middle, it's bouncy and a little firm (like a cake). It won't feel "wet".
- Repeat adding a thin layer of fat to the pan and pouring pancakes.
