Creamy Pumpkin Meat Sauce
This sauce is bursting with fall flavor and spice. It is the ultimate Autumn comfort meal. Add Pasta of your choice or serve over mashed potatoes or rice. You will not be disappointed!
Servings: 8 people
Ingredients
- 1.5 lbs Ground Beef (or meat of choice)
- 1/2 cup Onion, chopped
- 1 cup Milk
- 8 oz (1 block) Cream cheese
- 15 oz can Pumpkin Puree
- 1 cup White cheddar cheese, freshly shredded
- 1/2 cup Parmesan cheese, shredded or grated Freshly shredded from the block will yield the best results
- 1.5 tbsp Garlic, minced
- 1.5 tbsp Italian seasoning
- 2 tsp Oregano
- 1/8 tsp Ground nutmeg
- 1/4 tsp Ground coriander
- 1/4 tsp Crushed red pepper for a more spicy dish, use 1/2 tsp
- 2 tsp Salt
- 1/2 tsp Pepper
Instructions
- In a small pan, cook the onions on low/ medium heat until soft and transparent, about 5-10 minutes.
- In a large pan, cook ground beef until just browned. Add the spices and the garlic. Cook the spices in the meat for 2 minutes. Then add the onion. Let cook until the meat gets dark and crispy. If you prefer to drain the fat, drain it after the meat is just browned and move forward.
- Add The milk, cream cheese (I cut them in chunks to make melting faster), and pumpkin.
- Once melted and mixed, remove from the heat and add the cheese. Stir well.
- Serve with Pasta, over mashed potatoes, or just enjoy on it's own!
