Chipotle Chicken Soup
This is a sour, savory delight that is filling and freezer friendly!

Ingredients
- 3-4 Chicken Breast
- 8 cups Chicken broth
- 1 can Sweet corn
- 1 can Fire-roasted diced tomatoes
- 1 can Black beans
- 1/2 can Chipotle peppers in adobo sauce* *3-4 chopped peppers and 1-2 tablespoons of sauce
- 1 whole Fresh jalapeno, chopped* *without seeds for a mild taste. For more spice, keep the seeds.
- 1 cup Fresh cilantro, chopped
- Juice of 2 limes
- 1/2 Onion, chopped
- 5 cloves Garlic
- 1 tsp Salt
- 1/2 tsp Fresh ground pepper
- 1/2 tsp Cumin
- 1 tsp Coriander
Topping suggestions for serving
- Avacado slices
- Shredded cheese
- Sour cream
- Lime juice
- Fresh herbs
Instructions
- Combine all ingredients in crock pot.
- Cook on high for 4-6 hours or on low for 8-10 hours.
- pull out chicken breasts, shred with two forks, and add back in.
- Serve with toppings.
Notes
This is a great freezer meal! Let cool completely and put in a freezer-safe bag or container. If you use a bag, freeze flat for easy storage and thawing.
