Guinness Potato Soup
This is a warm, creamy, and very flavorful soup! It feels like a hug and is the perfect cold-weather comfort food. It also does very well in the freezer.
Servings: 8 people
Ingredients
- 6 strips Bacon
- 1 Yellow onion, chopped
- 1 tbsp Garlic, minced
- 1/3 Cup Flour
- 2.5 lbs Yellow Potatoes, diced or gold potatoes
- 2 cups Beef broth
- 2 cups Milk
- 1/2 cup Heavy cream
- 1 glass bottle Guinness stout beer
- 1 tsp Salt add more to taste
- 1/2 tsp Pepper add more to taste
Instructions
- Using kitchen scissors, cut bacon strips into chunks.
- In a large pot, cook the bacon pieces until crispy. Remove the pieces and keep the fat in the pot.
- Add the chopped onion to the bacon fat and saute until translucent and starting to brown,
- Add the minced garlic and cook for 2-3 minutes.
- Add the flour. Cook for 2-3 minutes.
- Add Broth, milk, heavy cream, beer, salt, pepper, and diced potatoes.
- bring to a boil and cook until potatoes are fork-tender. About 10 minutes.
- Use an immersion blender to blend up the soup. You can leave it a little chunky, or blend until very smooth.
- Taste for seasoning and cook an additional 1-2 minutes.
- Top with the bacon pieces, fresh grated white cheddar, sour cream, and chopped jalapeno, or whatever you prefer!

Notes
This soup freezes very well, but please note as it is thawing it will look split and chunky. As it warms up, whisk gently and it will come back together perfectly!
