Feta Grilled Chicken

Ingredients

Feta Sauce

  • 1 8oz Feta cheese block
  • 1 jar Kalamata olives* *Keep them whole or slice them, whatever you prefer.
  • 1 package Grape tomatoes
  • 2 tbsp Butter or olive oil
  • 1 tbsp Garlic, minced
  • 1/4 tsp Salt
  • 1/8 tsp Pepper, fresh ground
  • 2 tsp Italian Seasoning

Chicken

  • 4 Chicken breasts, sliced horizontally in half
  • Salt, Pepper, Garlic powder to taste

Instructions

Feta Sauce

  • Put the feta block in the center of a small baking dish (it's better if things are compact)
  • Put the olives and tomatoes around the feta block, leaving the top of the block exposed.
  • Add your garlic, salt, pepper, and Italian seasoning and stir around until everything is coated.
  • Cut the butter into chunks and lay them around the top (I like to put a chunk of butter on top of the feta cheese. If using oil, drizzle over the top.
  • Bake in 400℉ oven for about 30 minutes, or until cheese is golden and tomatoes are popping.
  • Stir and gently pop the tomatoes as you go. Pop away from your face and clothes, they can burn.
  • Set aside until chicken is complete

Chicken

  • Cut all chicken breast in half horizontally so you have thin servings. Season with salt, pepper, and garlic powder.
  • Grill until inside temp reads at least 165℉
  • Top with feta sauce and enjoy!
